Cured is chef Steve McHugh’s charcuterie-driven New American restaurant at the Pearl, set inside the brewery complex’s restored 1904 administration building just north of downtown San Antonio. Food lovers come for house-cured meats, Texas-sourced cooking, and a bar that takes cocktails as seriously as the kitchen takes pork.
The name is personal. McHugh opened Cured in 2013 after surviving non-Hodgkin’s lymphoma, and the restaurant supports charitable causes through its giving programs. Inside, original brick, tall windows, and rows of hanging salumi set a warm, rustic tone. Start with a charcuterie board built from in-house terrines, sausages, and cured cuts, served with pickles and mustards. From there, move to seasonal plates that pull from regional farms and Gulf waters. The cocktail list favors whiskey and classic structures with local touches. McHugh has been a multiple-time James Beard finalist for Best Chef: Texas and Southwest.
Visitor Highlights & Practical Info
Reserve ahead for Friday and Saturday dinners and for weekend brunch, when crowds from the Pearl Farmers Market fill the grounds. Weekday happy hour at the bar is the easiest way to sample boards and cocktails without a booking. For date night, ask for a table near the windows. You can walk the River Walk’s Museum Reach to the Pearl, or ride a river barge to the Pearl stop. Hotel Emma and the Pearl’s shops are steps from the door. Confirm current hours on Cured’s website before you go.
