Restaurant JAG is a one-MICHELIN-star contemporary French restaurant on the second floor of STPI Creative Workshop and Gallery at Robertson Quay. Diners come for one of Singapore’s most serious vegetable-led tasting menus, where produce takes the lead and the kitchen adapts to each guest’s dietary preferences (MICHELIN Guide).
Chef Jeremy Gillon and restaurateur Anant Tyagi founded JAG in 2018 and named it after their initials. Gillon has since left. Executive chef Laurence Tan, a Singaporean who was previously the restaurant’s second-in-command, now runs the kitchen and keeps the botanical philosophy intact (SC360). The centrepiece is “The Grand Experience,” a découverte menu of herbs, roots and plants served at their seasonal peak. The dining room sits in a restored 19th-century warehouse overlooking the Singapore River (Restaurant JAG). Service is a real strength here: general manager Maryjoy Lim won the 2026 MICHELIN Guide Singapore Service Award. Wine pairings are built around the progression of courses.
