CEBO is the one-Michelin-star dining room inside the five-star Hotel Urban on Carrera de San Jerónimo, a few minutes’ walk from Puerta del Sol. Chefs Javier Sanz and Juan Sahuquillo run it, and food lovers come for tasting menus rooted in the products and memories of their native La Manchuela region in Albacete. The restaurant also holds two Repsol Suns for 2026 (CEBO).
The duo first made their name in Casa-Ibáñez with Cañitas Maite and Oba-, and Madrid Fusión named them Revelation Chefs (Michelin Guide). At CEBO they cook without artifice, building deep, nuanced flavors from carefully chosen ingredients. For the 2025–26 season, guests choose between two menus: the 13-course Classics, which revisits signature creations, or the 16-course Season menu (CEBO Menus). The dining room is intimate and romantic, and attentive, polished service and Spanish wine pairings make it a natural choice for anniversaries and celebrations.
